How To Cook Short Rib

1 ½ to 2 pounds short ribs
1 onion, peeled and roughly chopped
3 cloves garlic, peeled and chopped
2 tablespoons olive oil
2 tablespoons tomato paste
1 teaspoon smoked paprika
1 cup red wine
2 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 teaspoon fresh thyme leaves
1 bay leaf
Kosher salt and freshly ground black pepper


1. Preheat oven to 325°F.

2. Heat olive oil in a large oven-proof Dutch oven or heavy pot over medium-high heat. Add the short ribs and brown on all sides, about 10 minutes.

3. Remove the ribs from the pot and set aside. Add the onion and garlic to the pot and cook until softened, about 5 minutes.

4. Return the ribs to the pot and stir in the tomato paste, paprika, wine, beef broth, Worcestershire sauce, brown sugar, thyme, and bay leaf.

5. Bring the mixture to a simmer and season with salt and pepper to taste.

6. Cover the pot and transfer to the preheated oven.

7. Bake for 2 to 2 ½ hours, until the ribs are tender.

8. Serve the short ribs with the sauce. Enjoy!
