1 pound boneless, skinless chicken breasts
2 bell peppers, diced
1 large onion, diced
4 ounces mushrooms, chopped
1/4 cup olive oil
2 teaspoons garlic powder
2 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
2 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon black pepper


1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or aluminum foil.

2. Cut chicken breasts into 1-inch cubes and place into a large mixing bowl.

3. Add bell peppers, onion, mushrooms, olive oil, garlic powder, paprika, oregano, thyme, balsamic vinegar, salt, and black pepper to the bowl. Toss to combine.

4. Place chicken and vegetables onto the prepared baking sheet and spread into an even layer.

5. Bake for 15 minutes, then flip and bake for an additional 10-15 minutes, or until chicken is cooked through and vegetables are tender.
