Ingredients:
-1 lb. large scallops
-2 tablespoons olive oil
-1/4 teaspoon kosher salt
-1/4 teaspoon freshly ground black pepper
Instructions:
1. Begin by removing the small muscle tab from the side of each scallop. To do this, simply slide your finger between the muscle and the body of the scallop and gently pull it away. Discard the muscle tab.
2. Heat a large skillet over medium-high heat. When the skillet is hot, add the olive oil.
3. When the oil is hot, add the scallops in a single layer. Season with the salt and pepper.
4. Cook the scallops for 2 minutes on each side, flipping once.
5. Reduce the heat to low, cover the pan, and cook for an additional 2-3 minutes until the scallops are cooked through.
