Ingredients
1 cup dry red kidney beans
2 tablespoons olive oil
1 onion, diced
1 garlic clove, minced
1 teaspoon ground cumin
2 teaspoons chili powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 1/2 cups vegetable broth
Instructions
1. Soak the beans overnight in a large bowl filled with cold water.
2. Drain the soaked beans and rinse them with cold water.
3. Heat the olive oil in a large pot over medium heat.
4. Add the diced onion and cook until softened, about 5 minutes.
5. Add the garlic, cumin, chili powder, salt, and pepper. Cook for 1 minute.
6. Add the drained beans and vegetable broth to the pot.
