– 2-3 beets (depending on size)
– 2 tablespoons of olive oil
– Salt and pepper to taste


1. Preheat oven to 400 degrees Fahrenheit.
2. Wash the beets and trim off the stems and leaves.
3. Peel the beets, using a vegetable peeler or a sharp paring knife.
4. Cut the beets into 1-inch cubes.
5. Place the beets in a bowl and drizzle with olive oil.
6. Sprinkle with salt and pepper.
7. Line a baking sheet with aluminum foil and spread the beets in a single layer on the baking sheet.
8. Bake in the oven for 30-35 minutes, or until the beets are tender and easily pierced with a fork.
9. Serve warm or chilled. Enjoy!
