1. Begin by washing the ramps. Fill a bowl with cold water and swish the ramps around to remove any dirt. Place the ramps onto a kitchen towel to dry.
2. Take off the tops by cutting them off with scissors or a knife. Slice the ramps into 1/2-inch thick pieces.
3. Heat a skillet with olive oil over medium heat. Once the pan is hot, add the ramp pieces and sprinkle with salt and pepper.
4. Allow the ramps to cook for 4-5 minutes. You should start to see them browning. Once the ramps are cooked, remove them from the pan and serve.
Ramps can be used in a variety of dishes. Saute them with other vegetables or add them to soups and stews. They can also be served as a side dish with a main course.
