Ingredients
– 2 tablespoons sesame oil
– 1/2 pound ground pork
– 3 cloves garlic, minced
– 1 small onion, finely chopped
– 1 teaspoon grated fresh ginger
– 2 tablespoons soy sauce
– 2 tablespoons Chinese rice wine or dry sherry
– 1/2 teaspoon sugar
– 1/2 teaspoon salt
– 1/4 teaspoon freshly ground black pepper
– 1/4 teaspoon white pepper
– 2 tablespoons finely chopped fresh cilantro
– 2 tablespoons finely chopped scallions
– 1 package (about 18) round wonton wrappers
– 2 tablespoons all-purpose flour
Directions
1. Heat the sesame oil in a large skillet over medium-high heat. Add the pork, garlic, onion, and ginger and cook, stirring, until the pork is no longer pink, about 5 minutes.
2. Add the soy sauce, rice wine, sugar, salt, black pepper, and white pepper and cook, stirring, until the liquid is absorbed, about 1 minute. Remove from the heat and stir in the cilantro and scallions.
3. Place a wonton wrapper on a work surface. Place 1 teaspoon of the pork mixture in the center of the wrapper. Lightly moisten the edges of the wrapper with water and fold the wrapper in half to form a half-moon shape, pressing the edges firmly to seal. Repeat with the remaining wrappers and filling.
4. Place the flour in a shallow bowl. Dip each pot sticker in the flour, coating lightly.
5. Heat a large skillet over medium-high heat and add enough oil to coat the bottom of the skillet. Add the pot stickers and cook until golden brown, about 3 minutes. Add 1/4 cup of water and cover the skillet. Reduce the heat to medium and steam until the water is absorbed, about 4 minutes. Remove from the heat and serve.
