Ingredients

1 pound dry pinto beans
2 tablespoons vegetable oil
1 large onion, diced
4 cloves garlic, minced
4 cups vegetable stock
2 tablespoons ground cumin
1 teaspoon oregano
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground coriander
1 teaspoon freshly ground black pepper
1 teaspoon salt

Instructions

1. Soak the beans overnight in a large bowl of water. Drain and rinse the beans before cooking.

2. Heat the oil in a large pot over medium-high heat. Add the onion and garlic and sauté until the onion is softened and lightly browned, about 5 minutes.

3. Add the drained beans to the pot and stir to combine.

4. Add the vegetable stock and all the spices. Stir to combine and bring the mixture to a boil.

5. Reduce the heat to low, cover the pot and let the beans simmer for about 1 ½ hours, stirring occasionally.

6. Remove the lid and let the beans cook for an additional 30 minutes, stirring often, until the beans are tender.

7. Taste and adjust the seasonings if necessary.
