Ingredients:

1 pie pumpkin

Instructions:

1. Preheat oven to 350 degrees F.
2. Using a sharp knife, cut the pumpkin in half from top to bottom.
3. Scoop out the seeds and discard.
4. Place the pumpkin halves, cut-side down, on a baking sheet lined with parchment paper.
5. Roast for about 40 minutes, until the pumpkin flesh is soft.
6. Allow the pumpkin to cool before handling.
7. Using a spoon, scoop out the cooked flesh from the skin.
8. Mash or puree the cooked pumpkin.
9. Use the cooked pumpkin in recipes, or store in the refrigerator in an airtight container for up to a week.
