Ingredients

• 2 lbs oxtails
• 2 tablespoons olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 1 teaspoon smoked paprika
• 1 teaspoon cumin
• 2 teaspoons dried oregano
• 2 cups beef broth
• 2 tablespoons tomato paste
• 2 tablespoons Worcestershire sauce
• 2 tablespoons red wine
• 2 tablespoons apple cider vinegar
• 2 bay leaves
• 1 teaspoon freshly ground black pepper
• 1 teaspoon sea salt
• 2 tablespoons corn starch
• 2 tablespoons cold water
• Fresh chopped parsley for garnish

Instructions

1. Heat olive oil in a large Dutch oven or pot over medium heat.

2. Add the oxtails and brown on all sides, about 10 minutes.

3. Remove oxtails and set aside.

4. Add onion and garlic and sauté until softened, about 5 minutes.

5. Add paprika, cumin, and oregano and stir until fragrant, about 1 minute.

6. Add the beef broth, tomato paste, Worcestershire sauce, red wine, apple cider vinegar, bay leaves, black pepper, and salt.

7. Return oxtails to the pot and bring to a simmer.

8. Reduce heat to low and simmer for 1 hour, or until oxtails are tender.

9. In a small bowl, mix together cornstarch and cold water.

10. Add cornstarch mixture to the pot and stir until sauce is thickened, about 2 minutes.

11. Garnish with fresh parsley and serve.
