2-3 pounds oxtails

1 teaspoon of sea salt

1 teaspoon of ground black pepper

1 tablespoon of olive oil

1 large onion, diced

2 cloves of garlic, minced

2 tablespoons of tomato paste

2 cups of beef broth

2 bay leaves

1 teaspoon of dried oregano


1. Preheat a large pot over medium-high heat.

2. Pat the oxtails dry with a paper towel and season both sides with the sea salt and black pepper.

3. Add the olive oil to the pot and then add the oxtails. Brown the oxtails for about 5 minutes per side, or until they’re nicely browned.

4. Remove the oxtails from the pot and set them aside.

5. Lower the heat to medium and add the onion, garlic, and tomato paste to the pot. Sauté them for about 5 minutes, or until the onions are soft and translucent.

6. Add the beef broth, bay leaves, and oregano and stir to combine.

7. Add the oxtails back to the pot and bring the liquid to a boil.

8. Once boiling, reduce the heat to low and cover the pot. Simmer the oxtails for at least 2 hours, or until the meat is tender and falling off the bone.

9. Serve the oxtails with your favorite sides and enjoy!
