Ingredients:

2-3 lbs of oxtails
1/4 cup of olive oil
A pinch of salt and pepper
1 medium onion, chopped
2 cloves of garlic, minced
2 cups of beef broth
2 tablespoons of tomato paste
1 bay leaf
1 teaspoon of thyme
1/2 teaspoon of oregano
1/2 teaspoon of smoked paprika
2 tablespoons of Worcestershire sauce
1/4 cup of red wine (optional)

Instructions:

1. Preheat the oven to 350°F (175°C).

2. In a large bowl, combine the oxtails with the olive oil, salt, and pepper. Make sure the oxtails are evenly coated.

3. Place the oxtails in a large roasting pan and add the chopped onion and minced garlic.

4. In a separate bowl, mix together the beef broth, tomato paste, bay leaf, thyme, oregano, smoked paprika, Worcestershire sauce, and red wine (if using).

5. Pour the beef broth mixture over the oxtails and vegetables in the roasting pan.

6. Cover the roasting pan with aluminum foil and bake for 2-3 hours, or until the oxtails are tender and cooked through.

7. Serve the oxtails with mashed potatoes, rice, or your favorite side dish. Enjoy!
