Ingredients
2-3 pounds oxtails
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large carrots, peeled and cut into 1-inch pieces
1 large onion, peeled and cut into 1-inch pieces
3 garlic cloves, minced
1/4 cup tomato paste
1/4 cup red wine
2 cups chicken stock
1 teaspoon dried oregano
2 bay leaves
Instructions
1. Preheat your oven to 350 degrees Fahrenheit.
2. Rinse the oxtails and pat them dry with a paper towel.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Generously season the oxtails with salt and pepper and add them to the skillet.
5. Brown the oxtails on all sides, about 8 minutes.
6. Transfer the oxtails to a 6-quart crock pot.
7. Add the carrots, onion, garlic, tomato paste, red wine, chicken stock, oregano, and bay leaves to the crock pot.
8. Place a lid on the crock pot and cook on low for 8 hours.
9. Once the oxtails are cooked, remove them from the crock pot and set aside on a plate.
10. Strain the liquid from the crock pot and discard the vegetables.
11. Place the strained liquid back in the crock pot and bring to a boil.
12. Reduce the heat and simmer until the sauce has thickened, about 10 minutes.
13. Add the oxtails back to the crock pot and simmer for an additional 5 minutes.
14. Serve the oxtails with the sauce, over mashed potatoes or rice. Enjoy!
