1 lotus root
2 tablespoons of oil
1-2 tablespoons of soy sauce
1 teaspoon of sugar


1. Begin by washing the lotus root and peeling off any outer skin. Cut the root into thin slices, about 1/8 inch thick.

2. Heat a large skillet over medium-high heat. When the pan is hot, add the oil and swirl to coat the bottom.

3. Add the lotus root slices to the pan and cook, stirring occasionally, until they are lightly browned and tender, about 5 minutes.

4. Add the soy sauce and sugar and stir to combine. Continue cooking for an additional 2-3 minutes, until the lotus root is fully cooked and the sauce is thick and bubbly.

5. Serve immediately with steamed rice or your favorite stir-fry vegetables. Enjoy!
