Ingredients

2-3 dozen fresh, live little neck clams
2 tablespoons extra-virgin olive oil
2 cloves garlic, finely chopped
1 teaspoon red pepper flakes
1/4 cup white wine
2 tablespoons butter
1/4 cup chopped fresh parsley

Instructions

1. Begin by soaking the clams in a large bowl of cold water for 20 minutes to remove any grit or sand.

2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until fragrant, 1-2 minutes.

3. Add the clams to the skillet and pour in the white wine. Cover the skillet with a lid and cook, shaking the skillet occasionally, until the clams open, about 5 minutes.

4. Remove the lid and add the butter. Cook for a minute or two, until the butter is melted and the sauce is slightly reduced.

5. Remove from the heat and stir in the chopped parsley. Serve the clams, with the sauce, in individual bowls. Enjoy!
