Ingredients

• 12 jalapenos
• 2 cups shredded cheddar cheese
• 8 ounces cream cheese, softened
• 2 tablespoons chopped fresh cilantro
• 2 tablespoons chopped red onion
• 1 teaspoon garlic salt
• 1 teaspoon chili powder
• 1/2 teaspoon ground cumin
• 1/2 teaspoon cayenne pepper
• 1/2 cup all-purpose flour
• 2 eggs, beaten
• 1/2 cup milk
• 2 cups panko bread crumbs
• Oil for frying

Instructions

1. Preheat the oven to 350°F (175°C).

2. Cut the jalapenos in half lengthwise and use a spoon to scoop out the seeds and membranes.

3. In a medium bowl, combine the cheddar cheese, cream cheese, cilantro, red onion, garlic salt, chili powder, cumin, and cayenne pepper.

4. Fill each jalapeno half with the cheese mixture and place them on a baking sheet.

5. Bake for 15 minutes, or until the cheese is melted and bubbly.

6. Meanwhile, set up a dredging station by placing the flour, eggs, and milk in separate shallow dishes, and the panko bread crumbs in another shallow dish.

7. Dip each jalapeno in the flour, then the egg mixture, and finally the panko bread crumbs.

8. Heat enough oil in a large skillet over medium-high heat to reach a depth of about 1 inch.

9. Working in batches, fry the jalapeno poppers for about 2 minutes, or until golden brown.

10. Remove the jalapeno poppers from the oil and place them on a paper towel-lined plate to drain.

11. Serve the jalapeno poppers warm. Enjoy!
