Ingredients

• 8 Italian sausages
• 2 tablespoons olive oil
• 1 onion, thinly sliced
• 2 cloves garlic, minced
• 2 bell peppers, thinly sliced (any color)
• Salt and freshly ground black pepper, to taste
• 1 teaspoon Italian seasoning
• 1 teaspoon smoked paprika
• 1/2 cup chicken broth
• 2 tablespoons freshly chopped parsley leaves

Instructions

1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the Italian sausages and cook until lightly browned, about 5 minutes.
3. Push the sausages to one side of the skillet and add the onion, garlic, and bell peppers.
4. Season the vegetables with salt, pepper, Italian seasoning, and smoked paprika, to taste.
5. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
6. Pour the chicken broth into the skillet and bring to a simmer.
7. Cover the skillet and simmer until the sausages are cooked through and the vegetables are tender, about 15 minutes.
8. Serve the sausages with the vegetables and garnish with parsley. Enjoy!
