1 cup Israeli couscous
2 tablespoons olive oil
2 tablespoons butter
1/2 cup finely chopped onion
2 cloves garlic, minced
1 cup vegetable or chicken broth
1/2 teaspoon salt
1. Heat oil and butter in a large saucepan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
2. Add the couscous and stir to coat with the oil and butter.
3. Add the broth and salt and bring to a boil. Reduce the heat to low, cover, and simmer for 10 minutes.
4. Remove from the heat and fluff with a fork before serving.
