– 4-6 medium-sized golden beets
– 2 tablespoons olive oil
– 1 teaspoon sea salt
– 1/2 teaspoon freshly ground black pepper
– 2-3 tablespoons fresh herbs of choice (thyme, rosemary, oregano, etc.)


1. Preheat your oven to 400°F (204°C).

2. Line a baking sheet with parchment paper.

3. Wash and peel the beets, then cut them into 1/2-inch thick wedges.

4. Place the beets on the prepared baking sheet.

5. Drizzle the olive oil over the beets.

6. Sprinkle with sea salt and ground pepper.

7. Add the fresh herbs.

8. Toss to combine and make sure the beets are well-coated with the oil, herbs and seasonings.

9. Roast the beets in the preheated oven for 25-30 minutes, or until they are tender and golden brown.

10. Serve warm and enjoy!
