Ingredients

– 4 medium green tomatoes, cut into 1/4-inch slices
– 1/2 cup all-purpose flour
– 1 teaspoon salt
– 1 teaspoon garlic powder
– 1/2 teaspoon black pepper
– 1/4 teaspoon paprika
– 1/4 teaspoon cayenne pepper
– 2 large eggs
– 1/2 cup cornmeal
– 1/4 cup vegetable oil

Directions

1. In a shallow bowl, mix together the flour, salt, garlic powder, black pepper, paprika, and cayenne pepper.
2. In another shallow bowl, whisk together the eggs.
3. In a third shallow bowl, mix together the cornmeal.
4. Dip each tomato slice in the flour mixture, shaking off any excess.
5. Dip the tomato slice into the egg mixture, letting any excess drip off.
6. Dip the tomato slice into the cornmeal mixture, pressing to coat both sides.
7. Heat the vegetable oil in a large skillet over medium-high heat until the oil is shimmering.
8. Place the coated tomato slices in the skillet and cook for 3-4 minutes, flipping once, until the tomatoes are golden brown and cooked through.
9. Transfer the fried green tomatoes to a paper towel-lined plate to drain any excess oil.
