1 pound of fresh black eyed peas, rinsed and drained
1 tablespoon of olive oil
1 tablespoon of butter
1/2 cup of chopped onion
2 cloves of garlic, minced
1/4 teaspoon of cayenne pepper
1/2 teaspoon of dried oregano
1 teaspoon of ground cumin
1/2 teaspoon of salt
1/4 teaspoon of ground black pepper
2 cups of vegetable broth


1. Heat the olive oil and butter in a large saucepan or Dutch oven over medium heat.
2. Add the onions and garlic and cook until softened, about 5 minutes.
3. Add the cayenne pepper, oregano, cumin, salt and pepper and cook for another minute.
4. Add the black eyed peas and vegetable broth and bring to a boil.
5. Reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally, until the black eyed peas are tender.
6. Serve hot. Enjoy!
