Ingredients

1 pound dry pinto beans
1 teaspoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon salt

4 cups vegetable broth or water

Instructions

1. Soak the beans: Place the beans in a large bowl and cover with at least 2 inches of water. Let the beans soak for 8 hours or overnight.

2. Drain the beans: Drain off any liquid left in the bowl and rinse the beans under cold running water.

3. Heat the oil: Heat the oil in a large pot over medium-high heat.
