– 1 cup of dry lentils
– 1-2 tablespoons of olive oil
– 2-3 cloves of garlic, minced
– 1 onion, diced
– 2-3 cups of vegetable broth
– Salt and pepper, to taste

Instructions

1. Start by rinsing the lentils in a colander to remove any debris, then set aside.

2. In a large pot or saucepan, heat the olive oil over medium heat.

3. Add the garlic and onion and sauté until the onion is translucent, about 5 minutes.

4. Add the lentils to the pot and stir to combine.

5. Pour in the vegetable broth and stir.

6. Bring the mixture to a boil, then reduce the heat to low.

7. Simmer the lentils, stirring occasionally, for 15-20 minutes or until they are tender.

8. Add salt and pepper to taste.

9. Serve warm. Enjoy!
