1 cup dried pinto beans

Instructions

1. Begin by sorting and rinsing the beans. Remove any small stones or debris and discard.

2. Soak the beans overnight by placing them in a pot and covering them with two to three inches of water. If you do not have time to soak the beans overnight, use the quick method: Bring the beans to a boil in a pot of water and let them boil for two minutes. Remove the pot from the heat, cover, and let the beans soak for one hour.

3. After the beans have finished soaking, drain the water from the pot.

4. Place the beans back in the pot and cover them with fresh water. Bring the beans to a boil and reduce the heat to a gentle simmer.

5. Simmer the beans for approximately two hours, or until they are tender.

6. Add salt to taste, if desired.

7. Serve the beans warm.
