– 1 cup of dried black-eyed peas
– 2 tablespoons of olive oil
– 1 onion, diced
– 2 cloves of garlic, minced
– 2 cups of vegetable broth
– 1 teaspoon of dried basil
– 1 teaspoon of dried oregano
– Salt and pepper to taste

Instructions:

1. Begin by washing and sorting the dried black-eyed peas. Discard any discolored peas or any other debris.

2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 4-5 minutes.

3. Add the black-eyed peas to the pot and stir to combine. Pour in the vegetable broth and add the basil and oregano.

4. Bring the mixture to a boil, then reduce the heat to low and simmer for about 40 minutes, or until the black-eyed peas are tender.

5. Once the black-eyed peas are cooked, season with salt and pepper to taste. Serve warm. Enjoy!
