Ingredients

– 2 cups dried chickpeas
– 6-8 cups of water
– Salt to taste
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 2 tablespoons fresh parsley, chopped
– 2 teaspoons cumin
– 1 teaspoon paprika
– 1 teaspoon chili powder
– 1/2 teaspoon turmeric
– 1/2 teaspoon garlic powder

Instructions

1. Start by rinsing and sorting your chickpeas. Remove any stones, dirt, or debris.

2. Add the chickpeas to the Instant Pot and cover with 6-8 cups of water.

3. Add the salt and the olive oil to the pot.

4. Secure the lid and set the valve to sealing.

5. Cook on Manual High Pressure for 25 minutes.

6. When cooking is complete, use a natural release for 10 minutes, then quick release the remaining pressure.

7. Drain the chickpeas and rinse with cold water.

8. Add the chickpeas back to the pot and add the garlic, parsley, cumin, paprika, chili powder, turmeric and garlic powder.

9. Stir to combine, then secure the lid and set the valve to sealing.

10. Cook on Manual High Pressure for 3 minutes.

11. When cooking is complete, use a natural release for 10 minutes, then quick release the remaining pressure.

12. Serve your chickpeas warm with your favorite sides. Enjoy!
