Eggplant is a versatile vegetable that can be prepared in a variety of ways. Chinese eggplant is a popular variety that can be cooked in a Chinese-style stir-fry, baked, steamed, or boiled. Chinese eggplant is typically longer, slimmer, and more tender than the regular eggplant you may see in the grocery store.

Ingredients

– 2 large Chinese eggplants
– 1 tablespoon vegetable oil
– 2 cloves of garlic, minced
– 2 tablespoons soy sauce
– 1 tablespoon rice wine or dry sherry
– 1 teaspoon sesame oil
– 2 tablespoons water
– Salt and pepper to taste

Instructions

1. Cut the eggplants into 1/2-inch slices.
2. Heat the vegetable oil in a large skillet over medium heat.
3. Add the eggplant slices and stir-fry for about 5 minutes, or until the eggplant is lightly browned.
4. Add the garlic and continue to stir-fry for another minute.
5. Add the soy sauce, rice wine, sesame oil, and water.
6. Reduce the heat to low and cover the skillet.
7. Simmer for 10 minutes, or until the eggplant is tender.
8. Season with salt and pepper to taste.
9. Serve immediately.
