– 3 lb. beef roast
– 1/4 cup olive oil
– 2 tablespoons garlic, minced
– 2 teaspoons black pepper
– 2 teaspoons dried rosemary
– 2 teaspoons dried thyme
– 1 teaspoon salt
– 1/2 cup beef broth


1. Preheat oven to 325°F (165°C).

2. Pat beef roast dry with a paper towel.

3. In a small bowl, combine olive oil, garlic, pepper, rosemary, thyme, and salt. Mix until well combined.

4. Rub the oil mixture onto the roast.

5. Place the roast in a roasting pan and pour beef broth over the top.

6. Place the pan in the preheated oven and roast for 1 hour and 45 minutes or until the internal temperature of the roast reaches 145°F (63°C).

7. Remove the roast from the oven and let it rest for 10 minutes before slicing and serving.
