Ingredients:
-1 cup of dried chickpeas
-3 cups of water
-1 teaspoon of salt
-1 tablespoon of oil (optional)
Instructions:
1. Start by sorting and rinsing the chickpeas. Spread the chickpeas out on a plate or in a bowl, and carefully inspect for any small stones or debris. Discard any damaged or discolored beans. Once you have sorted through them, rinse them in a colander under cold running water.
2. Place the sorted and rinsed chickpeas in a bowl, and cover with three times as much cold water. Soak the chickpeas overnight, or for at least 8 hours.
3. When you are ready to cook, drain and rinse the chickpeas.
4. Place the drained chickpeas in a pot, and cover with fresh water. Add the salt and oil (if using).
5. Bring the pot to a boil, then reduce the heat to a simmer. Simmer for 45 minutes to 1 hour, or until the chickpeas are tender.
6. Drain the cooked chickpeas and enjoy!
Tips:
-Soaking the chickpeas overnight will help to reduce cooking time and make them easier to digest.
-If you don’t have time to soak the chickpeas overnight, you can also do a “quick soak” by bringing the chickpeas to a boil, turning off the heat and allowing them to sit, covered, for 1 hour.
-If you are using canned chickpeas, you can skip the soaking and cooking steps, and just rinse and drain the chickpeas.
