Ingredients

1 (12- to 14-pound) turkey

Salt

Ground black pepper

1 onion, peeled and quartered

2 stalks celery, roughly chopped

2 cloves garlic

1 lemon, halved

1/4 cup (1/2 stick) butter, melted

Instructions

1. Preheat the convection oven to 325°F.

2. Remove the giblets and neck from the turkey and discard or reserve for another use.

3. Rinse the turkey inside and out with cold water and pat dry with paper towels.

4. Sprinkle the cavity of the turkey with salt and pepper.

5. Place the onion, celery, garlic, and lemon halves in the cavity of the turkey.

6. Place the turkey, breast side up, on a rack in a roasting pan.

7. Brush the turkey with the melted butter.

8. Roast the turkey for 2 1/2 to 3 hours, or until a thermometer inserted into the thickest part of the thigh reads 165°F and the juices run clear when the thigh is pierced.

9. Remove the turkey from the oven and let rest for 20 minutes before carving.
