1 whole turkey, preferably fresh
2 tablespoons of olive oil
2 tablespoons of butter, melted
1 tablespoon of fresh rosemary, chopped
1 tablespoon of fresh thyme, chopped
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
Salt and pepper, to taste


1. Preheat oven to 400 degrees F.
2. Place the turkey on a cutting board or large plate.
3. Using kitchen shears or a sharp knife, cut along each side of the backbone to remove it.
4. Turn the turkey over and press down firmly to flatten it.
5. In a small bowl, mix together olive oil, butter, rosemary, thyme, garlic powder, smoked paprika, salt, and pepper.
6. Rub the mixture all over the turkey.
7. Place the turkey on a roasting pan and bake in preheated oven for one hour, or until the internal temperature of the turkey reaches 165 degrees F.
8. Remove from the oven and let cool for 10 minutes.
9. Carve the turkey and serve.

Tips and Tricks
