Ingredients

20 lb turkey
3 tablespoons olive oil
Salt and pepper
3 onions, peeled and quartered
1 lemon, quartered
2 sprigs rosemary
2 sprigs thyme
2 sprigs sage

Instructions

1. Preheat your oven to 325°F.
2. Thoroughly rinse the turkey and pat dry.
3. Rub the turkey with olive oil and season with salt and pepper.
4. Place the quartered onions, lemon, and herbs inside the turkey cavity.
5. Place the turkey on a roasting pan with a roasting rack.
6. Insert a meat thermometer into the thickest part of the thigh, avoiding any bones.
7. Roast the turkey for approximately 4 hours, or until the thermometer reads 165°F.
8. Baste the turkey every 45 minutes, to keep it moist.
9. Once the turkey is done, remove it from the oven and let it rest for 20 minutes before carving.

Tips

– To make sure your turkey is cooked through, check the temperature in two places: the innermost part of the thigh and the thickest part of the breast.
– If your turkey starts to brown too quickly, cover it with aluminum foil.
– If you need to speed up the cooking process, you can cover the turkey with aluminum foil and increase the temperature to 350°F.
