16 lb turkey
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons fresh herbs, such as rosemary, thyme, and sage
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1. Preheat your oven to 325°F.
2. Remove the giblets (heart, gizzard, and liver) from the turkey cavity and discard.
3. Rinse the turkey inside and out with cold water and pat dry with paper towels.
4. Rub the turkey with olive oil, butter, and herbs.
5. Sprinkle the turkey with salt and pepper.
6. Place the turkey, breast side up, on a roasting rack in a roasting pan.
7. Insert an oven-safe thermometer into the thickest part of the thigh without touching the bone.
8. Place the turkey in the preheated oven and roast for approximately 4 to 5 hours, or until the thermometer reads 165°F.
9. During the roasting process, baste the turkey with the juices in the bottom of the roasting pan every hour or two.
