1 (1-pound) rib steak
Kosher salt
Freshly ground black pepper
1 tablespoon olive oil


1. Pat the steak dry with paper towels and season generously with salt and pepper.

2. Heat the oil in a large cast-iron or stainless-steel skillet over medium-high heat until it’s just smoking.

3. Place the steak in the pan and cook until the bottom side is browned and crisp, about 4 minutes.

4. Flip the steak and cook for another 4 minutes for a medium-rare steak. For a medium steak, cook for another 5 minutes.

5. Transfer the steak to a plate and let it rest for 5 minutes.

6. Slice the steak against the grain and serve.
