Ingredients

– 1 petite sirloin steak
– 2 tablespoons olive oil
– Salt and pepper to taste

Directions

1. Remove the steak from the refrigerator and let it sit at room temperature for 20 minutes.
2. Pat the steak dry with a paper towel.
3. Rub the steak with olive oil and season both sides with salt and pepper to taste.
4. Preheat a cast iron skillet over medium-high heat for 2 minutes.
5. Place the steak on the hot skillet and cook for 2 minutes, then flip and cook for 2 minutes on the other side.
6. Reduce the heat to medium and continue to cook for 2 minutes on each side or until the steak reaches your desired doneness.
7. Remove the steak from the skillet and let it rest for at least 5 minutes before slicing and serving.

Tips

– Use a meat thermometer to check the internal temperature of the steak. Rare is 125-130°F, medium rare is 130-135°F, medium is 135-145°F and well done is 145°F and up.
– For a juicier steak, add a few tablespoons of butter to the skillet after flipping the steak.
– For added flavor, add fresh herbs, garlic, or shallots to the olive oil before rubbing onto the steak.
