Step 1: Preheat Your Pan

Begin by preheating a heavy-bottomed skillet or cast iron pan over high heat for a few minutes. If using a gas stove preheat the pan over medium-high heat.

Step 2: Season the Steak

Pat the steak dry with paper towels and season both sides with salt and pepper.

Step 3: Add the Fat

Add a tablespoon of butter or oil to the preheated pan and let it melt or heat up. Once the fat is very hot, carefully place the steak in the pan.

Step 4: Cook the Steak

Cook the steak for 3 minutes on the first side. Use a spoon or spatula to move the steak around the pan and sear the sides. After 3 minutes, flip the steak over and cook for another 3 minutes.

Step 5: Check the Doneness

To check the doneness of the steak, use a meat thermometer. The internal temperature of a medium-well steak should be 145 degrees F.

Step 6: Rest the Steak

Once the steak has reached the desired doneness, remove it from the pan and let it rest for at least 5 minutes before slicing. This will allow the juices to redistribute throughout the steak and give it more flavor.

Step 7: Serve the Steak

Slice the steak against the grain and serve. Enjoy!
