– 2 ribeye steaks, about 12 ounces each
– 2 tablespoons olive oil
– 2 teaspoons coarse salt
– 1 teaspoon freshly ground black pepper
– 1 teaspoon garlic powder
– 1 teaspoon dried thyme


1. Preheat the oven to 425°F and set a rack in the middle position.
2. Pat the steaks dry with paper towels and season both sides with salt and pepper. Sprinkle the garlic and thyme over both sides of the steaks.
3. Heat the olive oil in an oven-safe skillet or cast-iron pan over high heat until it starts to shimmer.
4. Place the steaks in the pan and sear for 2 minutes. Flip the steaks and sear for an additional 2 minutes.
5. Place the pan in the oven and cook for 3 to 5 minutes, depending on your desired doneness.
6. Remove the pan from the oven and let the steaks rest for 10 minutes before serving.


– If you don’t have an oven-safe skillet, transfer the steaks to a baking sheet after searing.
– Letting the steaks rest before serving allows the juices to redistribute, ensuring maximum flavor.
– If you don’t have an oven-safe skillet or cast-iron pan, you can also pan-sear the steaks and finish them in the oven.
