Ingredients

1 (3-pound) boneless chuck roast
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
2 bay leaves
1 teaspoon dried thyme
1 large onion, quartered
4 large carrots, cut into 2-inch pieces
4 cloves garlic, peeled and smashed

Instructions

1. Preheat the oven to 300°F.

2. Heat the olive oil in a large Dutch oven over medium-high heat. Pat the roast dry with paper towels and season with garlic powder, salt and pepper.

3. Place the roast in the Dutch oven and brown on all sides, about 8 minutes total.

4. Add the beef broth, Worcestershire sauce, tomato paste, bay leaves, and thyme to the Dutch oven.

5. Add the onion, carrots and garlic and bring to a boil.

6. Cover the Dutch oven with a lid and transfer to the preheated oven.

7. Bake for 3 hours, or until the roast is tender.

8. Remove the roast from the Dutch oven and transfer to a cutting board.

9. Slice the roast against the grain into 1/4-inch thick slices.

10. Serve with the vegetables and sauce from the Dutch oven. Enjoy!
