Ingredients

3-4 lb. beef chuck roast
1 tablespoon oil
1 teaspoon kosher salt
1 teaspoon black pepper
2 cloves garlic, minced
1 onion, diced
1 cup beef broth
2 tablespoons Worcestershire sauce
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons dried thyme
3 carrots, peeled and cut into large pieces
3 potatoes, peeled and cut into large pieces

Instructions

1. Heat oil in a large skillet over medium-high heat.
2. Season the chuck roast with salt and pepper.
3. Sear the roast in the skillet for 2-3 minutes per side, until browned.
4. Place the seared chuck roast in the crockpot.
5. Add the garlic, onion, beef broth, Worcestershire sauce, oregano, parsley, and thyme to the crockpot.
6. Cover and cook on low for 8 hours.
7. Add the carrots and potatoes to the crockpot and stir to combine.
8. Cover and cook on high for 2-3 more hours, until the vegetables are tender.
9. Serve the pot roast with the vegetables and enjoy!
