Ingredients

1 (3- to 4-pound) boneless beef chuck roast

2 tablespoons cooking oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1 teaspoon freshly ground black pepper

2 teaspoons kosher salt

1 cup beef broth

1/3 cup tomato paste

1/4 cup red wine

2 tablespoons Worcestershire sauce

2 bay leaves

1 large onion, cut into 6 wedges

2 cloves garlic, minced

1 large carrot, peeled and cut into 1-inch pieces

2 celery stalks, cut into 1-inch pieces

Instructions

1. Preheat oven to 350°F.

2. Rub the beef roast all over with oil. In a small bowl, combine garlic powder, onion powder, thyme, rosemary, paprika, black pepper, and salt. Rub seasoning blend all over the beef roast.

3. Heat a large, oven-safe Dutch oven over medium-high heat. Add the beef roast to the Dutch oven and cook, flipping occasionally, until all sides are browned, about 8 minutes.

4. In a medium bowl, whisk together beef broth, tomato paste, red wine, Worcestershire sauce, and bay leaves. Pour the mixture into the Dutch oven. Add the onion, garlic, carrot, and celery.

5. Cover the Dutch oven and transfer it to the preheated oven. Roast for 2 1/2 to 3 hours, or until the beef is very tender.

6. Remove the Dutch oven from the oven and carefully transfer the beef roast to a cutting board. Cover the roast with foil and let it rest for 10 minutes before slicing.

7. Strain the cooking liquid in the Dutch oven and discard the vegetables. Serve the beef slices with the cooking liquid. Enjoy!
