Ingredients

– 1 (3 to 4 pound) prime rib roast
– 2 tablespoons vegetable oil
– 2 tablespoons kosher salt
– 1 tablespoon freshly ground black pepper

Instructions

1. Preheat oven to 500°F.
2. Place the roast in a roasting pan. Rub the roast with the oil and season it liberally with salt and pepper.
3. Place roast in the oven and reduce the temperature to 325°F.
4. Roast the prime rib for about 20 minutes per pound, or until a thermometer inserted into the center of the roast registers 120°F for rare, 130°F for medium-rare and 140°F for medium.
5. Remove the roast from the oven and cover it loosely with aluminum foil. Let the roast rest for 15 to 20 minutes before carving.

Tips

– If your roast is larger than 4 pounds, begin checking the internal temperature about 10 minutes before the end of the estimated cooking time.
– When roasting, use an oven thermometer to ensure that the oven is at the proper temperature.
