Ingredients

– 3-4 lb beef roast
– 1-2 tablespoons olive oil
– 1 teaspoon garlic powder
– Salt and pepper to taste
– 2 onions, chopped
– 4 carrots, sliced
– 2 stalks celery, chopped
– 2 cups beef broth or water
– 1 teaspoon dried thyme

Instructions

1. Preheat oven to 325°F.

2. Heat a large Dutch oven or other oven-safe pot over medium-high heat.

3. Pat the roast dry with paper towels and season with garlic powder, salt, and pepper.

4. Add the olive oil to the pot, then add the roast and brown on all sides, about 5 minutes per side.

5. Transfer the roast to a plate and set aside.

6. Add the onions, carrots, and celery to the pot and cook for about 5 minutes, stirring occasionally.

7. Return the roast to the pot and pour in the beef broth or water.

8. Add the thyme, then cover the pot and transfer it to the preheated oven.
