Ingredients:

– 4-5 lb. pot roast
– 2 tablespoons olive oil
– 2 onions, sliced
– 4 cloves garlic, minced
– 4 stalks celery, chopped
– 2 carrots, chopped
– 2 cups beef broth
– 2 tablespoons tomato paste
– 2 teaspoons Worcestershire sauce
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon dried oregano
– Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat the oil in a large oven-safe skillet over medium heat.

3. Season the roast with salt and pepper on both sides and place in the skillet. Brown the roast on both sides, about 2 minutes per side.

4. Once browned, remove the roast from the skillet and set aside.

5. Add the onions, garlic, celery, and carrots to the skillet and cook for 5 minutes, stirring occasionally.

6. Add the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, oregano, and salt and pepper to the skillet and stir to combine.

7. Place the roast back into the skillet. Cover the skillet with a lid or aluminum foil and place in the preheated oven.

8. Cook for 3 hours, or until the roast is tender and falls apart easily.

9. Once the roast is cooked, remove from the oven. Slice or shred the roast and serve. Enjoy!
