Ingredients

– 2-3 pound chuck roast
– 2 tablespoons olive oil
– Salt and pepper
– 1 medium onion, diced
– 2 cloves garlic, minced
– 2 cups beef broth
– 2 tablespoons tomato paste
– 1 tablespoon Worcestershire sauce
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– 1 bay leaf

Instructions

1. Preheat oven to 350°F.

2. Heat a large oven-safe pot over medium-high heat with the olive oil.

3. Generously season the chuck roast with salt and pepper.

4. Place the chuck roast in the pot and brown on all sides.

5. Once browned, remove from the pot and set aside.

6. Add the diced onion and garlic to the pot. Cook for about 3-4 minutes, stirring frequently.

7. Add the beef broth, tomato paste, Worcestershire sauce, oregano, thyme, and bay leaf to the pot and stir to combine.

8. Place the chuck roast back into the pot.

9. Cover the pot and place in the pre-heated oven.

10. Cook for 2-3 hours, or until the chuck roast is fork-tender.

11. Remove the pot from the oven and let the chuck roast rest for 10 minutes before serving.

Tips

– If you want to make a gravy with the pan juices, remove the chuck roast from the pot and set aside. Place the pot on the stove over medium heat and whisk in a few tablespoons of flour until it forms a paste. Whisk in a few more tablespoons of flour as needed until the desired consistency is reached. Cook for a few more minutes, whisking constantly, until the gravy thickens.

– If the roast is not fork-tender after 2-3 hours, cover and continue cooking for an additional hour.
