Ingredients

– 5-7 pound boneless rib roast
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon smoked paprika
– 1 teaspoon fresh ground black pepper
– 2 tablespoons olive oil
– 2 tablespoons butter
– 2 sprigs fresh rosemary
– 2 tablespoons fresh chopped parsley

Instructions

1. Preheat your oven to 350°F.

2. Place the rib roast in a roasting pan and season generously with garlic powder, onion powder, smoked paprika, and fresh ground black pepper.

3. Heat the olive oil in a large skillet over medium-high heat. Add the butter and rosemary and cook until the butter is melted.

4. Brush the butter and rosemary mixture over the rib roast.

5. Place the rib roast in the oven and roast for 1 hour and 20 minutes, or until the internal temperature of the roast reaches 140°F.

6. Remove the rib roast from the oven and let it rest for 10-15 minutes before slicing.

7. Slice the rib roast and serve with the fresh chopped parsley. Enjoy!
