How To Cook Spanish Rice

– 2 tablespoons of olive oil
– 1 small onion, finely chopped
– 1 cup of long grain white rice
– 1 teaspoon of ground cumin
– 1 teaspoon of garlic powder
– 1/2 teaspoon of salt
– 1/4 teaspoon of black pepper
– 2 cups of chicken broth
– 1 (14.5 ounce) can of diced tomatoes with green chilies
– 1/2 cup of frozen peas


1. Heat the olive oil in a large saucepan over medium heat.

2. Add the onion and cook, stirring often, until the onion is softened and lightly browned, about 5 minutes.

3. Add the rice, cumin, garlic powder, salt, and black pepper and cook, stirring often, for 1 minute.

4. Add the chicken broth and diced tomatoes with green chilies and stir to combine.

5. Increase the heat to high and bring the mixture to a boil.

6. Reduce the heat to low, cover the saucepan, and simmer until the rice is tender and the liquid is absorbed, about 20 minutes.
