How To Cook Twice Baked Potatoes

Baked potatoes make a great side dish for any meal, but if you’re looking for something a little more special, try these twice-baked potatoes. They are full of flavorful toppings and can easily be customized to fit your family’s tastes.

Ingredients

• 4 large baking potatoes
• 2 tablespoons olive oil
• 1/4 cup sour cream
• 1/2 cup shredded cheese
• 4 slices bacon, cooked and crumbled
• 1/4 cup chopped chives
• Salt and pepper to taste

Instructions

1. Preheat the oven to 375 degrees F.
2. Scrub the potatoes and pat them dry.
3. Rub the potatoes with the olive oil and sprinkle them with salt and pepper.
4. Place the potatoes on a baking sheet and bake for 45 minutes, or until the potatoes are tender.
5. Remove the potatoes from the oven and let them cool for 10 minutes.
6. Cut the potatoes in half lengthwise and scoop out the flesh, leaving about a 1/4-inch-thick layer.
7. Place the hollowed-out potatoes back on the baking sheet and bake for an additional 10 minutes.
8. Place the potato flesh into a bowl and mash.
9. Add in the sour cream, cheese, bacon, chives, salt, and pepper and mix until combined.
10. Spoon the mixture into the hollowed-out potatoes and bake for an additional 10 minutes.
11. Serve warm.
