1 pork loin roast (approximately 2 lbs.)
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon salt


1. Preheat oven to 350°F (175°C).

2. In a small bowl, mix together the oregano, garlic powder, onion powder, paprika, cumin, chili powder, black pepper, and salt.

3. Rub the pork loin roast with olive oil and the spice mixture. Make sure to cover the entire surface of the roast.

4. Place the pork loin in a roasting pan. Cover the pan with aluminum foil.

5. Roast in preheated oven for 1 hour and 30 minutes, or until pork is cooked through.

6. Remove the pork loin from the oven and let it rest for 10 minutes before slicing.

7. Slice the pork loin into 1/4-inch thick slices and serve. Enjoy!
