-1.1kg belly pork
-3 cloves garlic, crushed
-2 tablespoons olive oil
-1 tablespoon smoked paprika
-2 tablespoons soft light brown sugar
-2 tablespoons sea salt
-2 tablespoons freshly ground black pepper


1. Preheat the oven to 200°C (400°F).

2. Place the belly pork in a roasting tray.

3. In a small bowl mix together the garlic, olive oil, smoked paprika, light brown sugar, salt and pepper.

4. Rub the mixture all over the belly pork.

5. Place the roasting tray in the oven and cook for 1 hour.


1. After 1 hour, turn the oven down to 180°C (350°F) and continue cooking for a further 1 hour.

2. Check the pork is cooked through by inserting a skewer into the thickest part – the juices should run clear.

3. If the pork is not cooked through, return to the oven for a further 15 minutes and check again.


1. Remove the pork from the oven and leave to rest for 10 minutes before carving.

2. Serve with steamed vegetables and creamy mashed potatoes.
