• 1 pork tenderloin
• 8-10 slices of bacon
• 1/4 cup of olive oil
• Salt and pepper, to taste
• 1/4 cup of honey
• 2 tablespoons of Dijon mustard
• 2 tablespoons of balsamic vinegar
• 1/4 cup of brown sugar
• 1 teaspoon of dried thyme
• 1 teaspoon of dried rosemary
• 1/2 teaspoon of garlic powder


1. Preheat the oven to 400°F.

2. Place the pork tenderloin on a cutting board and season generously with salt and pepper.

3. In a small bowl, combine the olive oil, honey, Dijon mustard, balsamic vinegar, brown sugar, thyme, rosemary, and garlic powder. Mix until everything is well-combined.

4. Spread the mixture on both sides of the pork tenderloin.

5. Place the bacon slices on top of the pork tenderloin, making sure to cover it completely. Use toothpicks to secure the bacon if needed.

6. Place the pork tenderloin in a baking dish and bake for 25-30 minutes, or until the bacon is crispy and the pork is cooked through.

7. Let the pork tenderloin rest for 10 minutes before slicing and serving. Enjoy!
